Ivy Tech Community College–Northeast hosting African dinner April 25

The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for an African dinner April 25. Community members will get the opportunity to sample traditional African fare while supporting students, as they showcase their culinary talents. Guests will be able to sample from the following items:

A La Carte Menu

Appetizers
Shrimp and Celery– Poached shrimp and crisp celery
accompanied by red and pink dipping sauces

Brika Tunisian Turnovers– Baked turnovers stuffed with tuna, mashed potatoes,
scallions and feta cheese

Mubattan Bruklu– Cauliflower stuffed meatball ragout in a spicy tomato sauce

Soup
Senegalese Peanut Soup– Hearty peanut soup with added chicken and sweet potatoes

Salads
Roasted Sweet Potato Salad– Granny smith apples, cranberries and sweet potatoes

Summer Day Salad– Ham, chicken, pineapple, melon and chopped peanuts

Entrées
Fish Cous Cous T’Faya– White fish baked with onions
(Served on a bed of cous cous and topped with almonds)

Tomato Basil Penne– Vegan beet cakes and sweet potatoes with basil tomato sauce and penne noodles

Lamb and Orange Kebabs– Grilled skewers of lamb and orange
(Served with Jollof rice and spiced carrots)

Moroccan Style Roast Chicken– Honey- and spice-roasted chicken
(Served with Jollof rice and spiced carrots)

Desserts
Spiced Cake– Toasted almonds, caramelized oranges and vanilla ice cream

Sauteed Plantains– Sauteed plantains in caramel sauce with toasted walnuts and vanilla ice cream

Nutty Phyllo Ghosts– Chocolate, apples and nuts packed into crisp phyllo pastry

Dinners are open to the public. Reservations are required. The dinners are served on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only. Wine is available at an extra cost per glass.

Reservations are taken for times between 5 and 6:30 p.m. and must be made at least 24 hours in advance. Call the Special Cuisines line at 260-480-2002 to make a reservation.
