Ivy Tech Community College–Northeast Hosting Mexican/South American Dinner April 18

The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for a Mexican/South American dinner April 18. Community members will get the opportunity to sample traditional Mexican/South American fare while supporting students, as they showcase their culinary talents. Guests will be able to sample from the following items:

A La Carte Menu

Appetizers
Stuffed Poblano Peppers– Poblano peppers stuffed with cheese and beef

Puerto Rican Emanadillas– Little meat pies

Eggplant and Goat Cheese Mosaic– Layered eggplant, goat cheese and red peppers 
(Served with a parsley sauce)

Soup
Chilled Cream of Avocado Soup– Served with sweet potato fritters, apples, cucumber
and oregano vinaigrette

Salads
Cucumber Salad– Blend of cucumbers, corn, and bell peppers dressed with red wine vinegar dressing

Guacamole Salad– A deconstructed version of the classic Mexican dip

Entrées
Tamales– Authentic tamales served with molé sauce and Spanish rice

Tortilla Rolls– Tortillas filled and baked with tomatoes and served with Columbian black beans

Crab and Avocado Ravioli– crab and avocado rolled in pasta
(Served with an avocado purée and an achiote foam)

Pueblano Rolls– Sesame roll topped with shredded chicken, avocado, goat cheese
and chilies (Served with guacamole and chips)

Desserts
Green Fig Dessert– Green figs in a simple syrup served with whipped cream

Orange Mousse with Mezcal– Orange mousse served with a sweetened red wine reduction

Brazilian Coconut Ice Cream– Coconut ice cream served with candied papaya

Dinners are open to the public. Reservations are required. The dinners are served on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only. Wine is available at an extra cost per glass.

Reservations are taken for times between 5 and 6:30 p.m. and must be made at least 24 hours in advance. Call the Special Cuisines line at 260-480-2002 to make a reservation.
