Ivy Tech Community College–Northeast hosting Russian dinner April 5

The Special Cuisines class at Ivy Tech Community College–Northeast invites the community to join its students, faculty and staff for an á la carte Russian dinner, “The Russian Experience,” on April 5. Community members will get the opportunity to sample traditional Russian fare while supporting students, as they showcase their culinary talents. There will be five courses.

Menu

Appetizers
Russian Blini- Caviar, smoked salmon and pickled herring bedded on a baby pancake

Lenivye Bareniki- Cheese dumplings fried in butter and served with two dipping sauces

Canape Sampler- Crab salad on toast, beet root relish on rye bread, chicken liver with bacon pate on toast

Soups
Borscht- A rich beet and veggie puree topped with sour cream

Solianka- Veal, ham, and kielbasa sausage

Salads
Fresh Spring Salad

Sauerkraut and Cranberries

Served with Medovik (Honey Bread)

Entrees
Kids menu: chicken strips with French fries

Bef Stroganov (Beef Stroganoff)- Classically prepared with strips of beef tenderloin in a mushroom and onion sauce served alongside fried potato slices and sautéed green beans

Morskoj Jazyks (Sole with vodka sauce and caviar)- Seasoned sole fillets in a creamy herb sauce on a bed of white rice with pan fried zucchini

Kotlety Pojarskie (Chicken Burgers)- An open face sandwich of ground chicken breast seasoned with herbs resting on Russian style slaw served with red potatoes fried in bacon

Veterian Pelmeni- Russian ravioli filled with cheese in a garlic wine sauce, adding a splash of color to this dish will be the veggie ragout and steamed broccoli

Dessert
Baked cheesecake with fresh berries and a raspberry sauce

Dinners are open to the public. They are located on Ivy Tech’s Coliseum Campus (3800 N. Anthony Blvd.) in the Hospitality Room (enter door 24 on the north side of the building). Cost is $20 per person, cash or check only.

Reservations are taken for times between 5 and 6:30 p.m. and must be made at least 24 hours in advance. To make a reservation, call the Special Cuisines line at 260-480-2002.
